How to Scale a Recipe for a Different Pan Size (With Easy Multipliers)
You found a recipe written for a 6-inch pan, but yours is 8 inches. Or it's a square pan and you only have round. Halving and doubling by guesswork is how baking fails — the ratio of sugar to flour stays the same, but the quantity has to scale with the pan. Here is the exact math, a lookup table, and where the easy mistakes hide.
The area method (the standard way)
Baking scales with pan area, not diameter. For round pans, the multiplier is the ratio of areas:
So a 6-inch recipe baked in an 8-inch pan needs (8 ÷ 6)² = ×1.78 of every ingredient: 100 g flour becomes 178 g, 2 eggs become 3.6 (more on eggs below), and baking temperature stays the same while baking time usually runs a bit longer for a bigger, shallower batch — check with a skewer rather than the clock.
Then multiply every ingredient by the same number. Don't round as you go — round once, at the end, per ingredient.

Multipliers are exact area ratios ((target diameter ÷ original diameter)²), rounded to two decimals. The classic "6-inch to 8-inch" case works out to ×1.78.
Square to round (and back)
Recipe says 8-inch round, you have an 8-inch square? They are not the same. An 8-inch square holds about 27% more batter than an 8-inch round. Compare by area:

A square pan holds more batter than a round pan of the same edge length — always compare by area, not by the number on the label.
For anything with height that matters — tall chiffon cakes, deep-dish brownies — volume ratios are the honest way to scale: multiply by (target volume ÷ original volume), pan height included.
The three mistakes that ruin scaled bakes
- Scaling by diameter. 6→8 inches is not "a third more", it's 78% more. Area, always.
- Leavening drift. Multiply baking powder and soda with everything else — they scale with the batter, not with "how much rise you want".
- Fractional eggs. 3.6 eggs is not a thing. Use 3 eggs plus beat a 4th and weigh out 60% of it (a large egg ≈ 50 g without shell), or just go with 4 and accept a slightly richer crumb.
When the math is fine but the arithmetic isn't
On paper this is all multiplication. In practice, mid-bake with flour on your hands, "178 g of everything, wait, was that the sugar already scaled?" is where errors creep in — especially with several ingredients in different units, or two pans combined (a 6-inch round plus a square), or scaling down to a smaller pan where rounding errors hurt proportionally more.
