Halving a Recipe Correctly: Eggs, Spice, and the Half-Size Pan (÷√2)

Living alone, you find an 8-inch cake recipe: halving the ingredients looks automatic, but shrinking has more traps than scaling up — eggs don't divide, spices vanish, and one pan size down is not half the batter. Item by item:

Pan: half the batter ≠ one size down

half-area pan = diameter ÷ √2 ≈ diameter × 0.71

Halving an 8-inch recipe needs a pan of half the area: 8 × 0.71 ≈ 5.7 inches — use a 6-inch (a little headroom), not a 7-inch (a 7-inch is 0.77× the area; half the batter spreads too thin and bakes into a pancake). Or keep the 8-inch pan with half the batter: a shorter cake, bake 5–8 minutes less, same temperature.

Time and temperature

Halved batter is shallower: temperature unchanged, time ×0.7–0.8, start skewer-testing 5 minutes early. Small volumes overbake easily — edges finish first; judge by skewer, not by the clock.
