Cupcake to Cake Conversion: 12 Cupcakes = Which Pan?
Cupcake recipe you'd rather bake as one whole cake (or the reverse): start from batter volume.
12 cupcakes vs round pans
| Round pan (2 in / 5 cm tall) | Volume | 12 cups fill | Verdict |
|---|---|---|---|
| 6-inch | ≈ 912 ml | 79% | overflows — won't fit |
| 8-inch | ≈ 1621 ml | 44% | thin single layer (see note) |
At 44% fill, an 8-inch round bakes thinner than the usual 60–70% fill — a short single layer. Two honest options: bake it anyway (shorter time, flatter crumb) or pick a pan closer to 60% fill. A 6-inch can't hold 12 cups (79% over) — split batches or scale the recipe ×1.27.
Time and temperature
18-minute cupcakes in an 8-inch round at 44% fill stay a fairly thin cake: keep 180 °C, expect 25–33 minutes. Depth is the variable — Shallower pan: about −10% time; deeper pan: +10–15%. Two sizes apart: drop 10 °C and extend. Always verify with a skewer..
What shouldn't convert
- Angel food / chiffon: they climb straight walls; cupcakes can't give them structure.
- Muffins (minimal-stir batters): a big pan leaves the center wet.
- Topped/filled recipes: cupcakes have a high surface-to-volume ratio; toppings overwhelm a cake.
The other direction (cake → cupcakes) almost always works: 18–22 minutes, same temperature.
