How to Adjust Baking Time for Different Pan Sizes
"How much longer?" is the wrong question after switching pans — batter depth decides baking time, not pan size. Same batter in a wider pan is shallower and bakes faster.
Three rules
- ±10% rule: one pan size apart (8→9 inch), same temperature, about ±10% time.
- Two-size rule: two or more sizes apart (6→9 inch), drop 10 °C and extend 40–50% — burnt edges with a raw center come from holding high heat.
- Skewer rule: the above are starting points. A skewer out of the center clean = done. Timers advise; skewers decide.
Why depth wins
Heat travels in from walls and surface; the center is last. Halve the depth and the heat path halves, but time drops only ~30–40% (surface evaporation is a fixed cost). Extra width adds little side-heating — "bigger pan = longer bake" holds only when depth grows too.

Testing doneness
- Skewer into the center, comes out clean (wet batter = keep going).
- Press the center gently: springs back = done; keeps a dent = raw.
- Edges just pulling from the pan = perfect; don't wait for a big gap.
